Gluten-Free Marinade For The Family

We found some great gluten-free marinade for the BBQ the other day when we went to the Originals Ottawa Spring Craft Sale. Not sure if you have noticed but many of these craft sales have a huge contingent of booths with small food producers. With the rising trend in the gluten free lifestyle, organic foods and veganism, some of the newest alternative foods first get introduced at these type shows.

I am always keeping an eye out for great gluten free diet foods especially when my daughter is around so that she has a good variety. We came across a booth called the Wicked Gourmet. I got a kick out of the name and had images of cauldrons etc running through my mind. They had dozens of different sauces, spices and dips including…drum roll…gluten-free marinades to die for and delicious spice mixes perfect for BBQ season. Being expert label readers, we have come to find that many sauces actually contain gluten so tend to do a happy dance when we find some that don’t.

Last week we took out our purchases of gluten free Carribean marinade and steak spice. We cut up some chicken pieces and through them into some heated butter with the Wicked Gourmet steak spice until it browned.

When the chicken was golden , we added Wicked Gourmet’s gluten-free Carribean Marinade to let it simmer and soak up the flavours.

While this was simmering, we sliced up some zucchini and dipped them in a bowl with milk, egg, and granulated garlic and then tossed them in some gluten-free bread crumbs and baked them on a cookie sheet at 450 for 7-12 minutes.

We served it all with rice and had a wonderful Sunday dinner. Everything that Wicked Gourmet makes is “wicked” they say. Our whole family enjoyed this dish made with the gluten-free marinade and steak spice.
